Fou du roy cheese, concord grape, quince & walnut.

Beautiful @cropthornefarmstand treviso layered with Le Fou du Roy cheese, walnuts & roasted like crispy cheesy lasagna!

Drizzled with fermented concord grape “saba”, quince preserved in quince beer from @blindenthusiasmbeer, walnut crema & garnished with loads of radicchio rosa dressed in rancio vinegar.

Our favourite dish all summer.

@broekporkacres BBQ Berkshire pork, rubbed in our “secret” spice blend, grilled over coals, glazed in lovage & maple and served with our Lovage Nuoc Cham style sauce. This dish was inspired by traditional Maggi sauce, which was originally named after its aroma of lovage.

We make our Nuoc Cham sauce using almost all local Alberta & B.C ingredients.
So many of you asked us to bottle up the sauce, so, we are doing just that! Follow our sister company @lessigferments & stay tuned for a release date.
